Our passion and belief in Prince Edward County terroir has enabled us to produce superb fruit from our vineyard. A difficult grape to grow and a finicky and fragile wine to make and age, Pinot Noir is both a winemaker’s dream and challenge. The risk is great but so is the reward.
Farming is as much an art as a science. Knowing our hillsides and understanding the needs of the vines to produce great fruit are behind every decision we make.
The elements come together in just the right way: lake effect, slope, sun exposure, soil and climate. Our vineyard practices are quality-driven: with low yields and extensive handwork, we get fruit with intense flavour from healthy, balanced vines.
Cold Creek Vineyards currently focuses on the production of Irish and Normandy inspired ciders, though our introduction to the industry was driven from a passion for wine. We continue to maintain our Pinot Noir and Frontenac Gris vineyards, with our Pinot Noir grapes used in wines produced at local wineries.
A•pear•itivo – 2019 Dessert Pear Cider
A•pear•itivo is a special release of Cold Creek dessert Pear Cider which has been made using County Pears with a blend of honey from the farm while aged in French Oak.
A•pear•itivo has a clear pale yellow hue, sweet and full bodied, moderate acidity. Low tannins. Hints of bitterness. Notes of pear juice & skin, floral, and honey.
Pairs well with figs, French Vanilla ice cream, Crème Brûlée, and a perfect companion with an after dinner cigar.
Éirinn Go Brách – 2019 Cider
The 2019 Éirinn go Brách cider is a traditional semi-dry sparkling cider, created with pressed Northern Spy apples, and fermented in French Oak Barrels until dry and then bottle conditioned with no fining or filtration.
Naturally cloudy, it will develop beautifully with age. This cider brings out the love of late harvest with a floral nose and notes of citrus and melon on the palate.
With a rich and round balanced acidity, the 2019 Éirinn go Brách will pair well with chicken and dishes with a spicy kick.
Cuvée Madeline – 2019 Cider
Our Cold Creek Cuvée Madeline Cider is produced using Prince Edward County Northern Spy Apples that enhance the character of our 2019 vintage.
Fresh and crisp ripe apple notes rise from the delicate bubbles with a fruity and slightly acidulous palate that leaves heightened flavours that brighten the finish.
